Description
“Café de Paris” is one of the few spice blends used in French cuisine. The mixture “Café de paris” was invented in 1930 in a restaurant in Geneva. Here, this mixture was first used for a fine sauce and served to an entrecote.
As with curry, there is no uniform recipe for this spice mixture “café de paris” – only one spice should always be included: finest dried French tarragon.
